It seems to me that most of these vets are geared towards mammals only!!!!

You can, but many vets only have a basic working knowledge of fish health from school and rarely see fish, so they don't often stay current on the best available treatments.

Also, there is the possibility that your fish health problem is not an actual disease, but a water quality problem instead. Without coming to your home to test the water himself or you taking a separate water sample., the vet can't help you with that usually.

If you have a tank of quite expensive or rare fish it can be worth the time and money to seek a vet's assistance, but only in that case would it be worth finding a vet that frequently sees fish.

Sure! You just have to find a vet that works with those type, some only work with dogs and cats and some do farm animals you just need to find some that work with fish!

Yes my dumb aunt took her gold fish that cost her 10 cents to a vet and paid over 200 dollars on him.

A while back a man took one of his prize Koi Carps that had lost an eye to the vets to get a glsss eye fitted, so yes it can be done.

Yes you can take your fish to a vet. However you need to ask the vet if they are certified Aquatic Vet. If they are not certified Aquatic Vet they will not be able to help you.
