Concentrate on a high-butterfat, no-sugar-added ice cream that both diabetics and those who are lactose intolerant can enjoy. Some people have more than one disease or condition. To market any product with only one target group is limiting. Up to 30% of people of European descent are lactose intolerant, and it is hgihter for those of African or Hispanic descent. One prediction I heard lately on the news was that in 20 years, everyone over the age of 25 will have Type 2 Diabetes.

Learn about the succesful zany Ben and Jerry brothers. In order for you to be successful and have fun in any business is to think outside of the box. Do things differently. If you want a ho-hum ice cream shop; people will buy breyers and take it home instead.
Read "The Purple Cow" by Seth Godin. It's a short and easy read and you can get it from the library. What you want to do is to take something ordinary like ice cream and make it spectacular. That's how Ben and Jerry did it and they made millions!

What has happened. Is the volume of sales has come down or the margin of profit.
If the total sales has come down then try to verify the reason. It may due to compitation, wrong location, or may be the quality of the product or service might be the cause. Rectify it.
If the margin of profit has come down, go for a price rise. But before doing so, make a small survey about your customers reaction. Good luck.
