it depends on what i'm writting.
i'm a college cheerleading coach, so i have lots of paperwork to fill out. i use black ink for that, whether i'm turning it in to someone at the school or keeping it for my own records, just so i keep it all neat looking and in the same color.
but i'm also a physical therapy student at another college, and i like to write in different colors while taking my notes. i think it keeps things from getting too boring, especially when i'm studying, so i don't have to stare at the same color for hours. but if i'm writing on a test or something i'm turning in to the teacher, i use blue or black ink.
so i guess as a whole, i probably use black more than any other colors.

Black, because I work in a medical office and charts can only be written in with black ink!

i use blue ,almost 90% of the time but i love useing red every chance i get.
