Because of the fellow known as St. Valentine.

He was a priest who performed marriages. and it was Caesar (??) who demanded, at the time, that marriages were forbidden between men and women. And despite the decree, he performed them anyway.

When Caesar found out, he had him imprisoned where Valentine received letters of thanks from those who received his ceremonies and were in love.

Caesar had his heart removed and if I remember correctly, had eaten it.

Or so that story goes.... Valentines day and all..... chocolates indicate the coagulated blood of the heart of Valentine which was eaten, and the heart for the love of them who were married through his forbidden ceremonies...... as well as the passing of the cards.......

Many years ago, ppl used to think that the heart is the center of our emotions, they didn't know anything about the brain.
Ppl still use the heart as a symbol of emotions like love.

Best of luck

Other than the answers above it may also be because the heart is the strongest organ in the human body...because it has to pump blood throught your body every sec of everyday...using this as a metaphor for saying your love is stronger than anything because it comes from your heart

Because when you really are in love with somebody, and you see that person, your heart starts beating faster! When you are with the person you love, your emotions accelerate the heart's rhythm and so you feel a pleasant warmth in your body.
The heart is the organ that has an unusual reaction when you love somebody...

Love primarily in the aspects of compassion, ability to forgive, tolerance, tenderness, self-sacrifice, etc. Love has many aspects: we must remember that and make sure we cultivate all aspects of Love.
We can develop “cordial” love in two ways:

The first of them can be call exoteric, i.e. natural. For example, through motherhood, raising children, sexual relationships, love for nature, etc. In order to succeed, a person has to learn to do everything not out of his self-interest, but for the sake of others, i.e. not in egoistic manner, but in altruistic one. If one’s love is directed in this manner, one has a chance, instead of getting deeper into the mire of sufferings caused by a growing burden of unsatisfied desires, to advance towards increasing happiness, which is a natural consequence of spiritual growth. In this case the exoteric options of development create opportunities for natural growth of the “organ” of emotional love — the spiritual heart.
