Actually I do. I clean them well in cold water. Then I cover them with water in a soup pot and add: chunks of onion, several cloves of garlic, a couple stalks of celery, 4 or 5 chicken bouillon cubes, salt, pepper, and a shake of crushed red pepper. I bring this to a boil and continue cooking slowly until they are done (2 or 3 hours.) I check the salt and adjust as needed. Serve with some warm crusty cornbread. YUMMY!
.....and they do not smell bad cooked this way.

A friend of mine boiled them, and then cooked them with bacon, black pepper, and hot sauce.
I didn't like them, though. I couldn't get past the smell of them boiling. The smell of boiled cabbage makes me sick, too, so don't think it's just chitlins.

I think they are best when they are fried with lots of tobasco and a little sage salt black pepper and more tobasco
