It is traditionally considered that the last word of the book series is scar. It's been said so since about book three and has been cited on many sources, most particularily mugglenet.com. However recently J.K. has said that the book has turned out differently then she had expected. Different characters have gotten a reprieve from death while one she didn't expect to died. So do to rewrites and these changes the last word could have been changed by now. Really the only people who know for certain what it is is J.K.R and her publishers. We'll just have to wait and see when the book comes out. But scar would be your best bet.

Quite some time ago JK Rowling said in an interview that at that time the final word was currently SCAR.
It may still be the same, but it may have changed with all the revisions. Also the last chapter is an epilogue that has been written for a long time and has been revised according to JKR.

Philosopher's Stone: 'I’m going to have a lot of fun with Dudley this summer…' Chamber of Secrets: And together they walked back through the gateway to the Muggle world. Prisoner of Azkaban: And, grinning broadly at the look of horror on Uncle Vernon’s face, Harry set off toward the station exit, Hedwig rattling along in front of him, for what looked like a much better summer than the last. Goblet of Fire: As Hagrid had said, what would come, would come … and he would have to meet it when it did. Order of the Phoenix: Instead he smiled, raised a hand in farewell, turned around, and led the way out of the station toward the sunlit street, with Uncle Vernon, Aunt Petunia, and Dudley hurrying along in his wake. Half-Blood Prince: His hand closed automatically around the fake Horcrux, but in spite of everything, in spite of the dark and twisting path he saw stretching ahead for himself, in spite of the final meeting with Voldemort he knew must come, whether in a month, in a year, or in ten, he felt his heart lift at the thought that there was still one last golden day of peace left to enjoy with Ron and Hermione. Dealthly Hallows: All was well.

scar
Jo said it in an interview, and confirmed it in 2005, during her interview with The-Leaky-Cauldron's Melissa Anelli and MuggleNet's Emerson Spartz:
Is the last word of book seven still scar?
JKR: At the moment. I wonder if it will remain that way.
