My favorite was Sweet Child O' Mine (Guns and Roses).
I just listened to Living On The Edge by Great White from their Once Bitten album this morning thru earphone, the guitar solo is awesome. It;s not (technically) complicated or furious, but I like it, maybe the whole band was having fun or else, but the outcome is perfect. While the drum and bass guitar keep the rhythm steady, the guitar add the mood in between the vocal till the song end, make me want to push the rewind button again.

Pink Floyd - Shine on you Crazy Diamond

Written about former member Syd Barrett - it is practically one long guitar solo until the vocals start after 5 minutes.

I also love the guitar sound Andy Summers gets on The Police's " Every Breath you Take" and the solo on "One of these Nights" by The Eagles

The solo in stairway to heaven is a classic and kind of a generic answer, but its a great solo. Also, This isnt really a specific solo, but my favorite guitar player would probably have to be The Edge, from U2, he does a bunch of different solos, and they are all great!
