Can let water and dirt into your gas tank which can lead to problems. Can also cause you to constantly smell gas. Id try running some gasline antifreeze in your next fill up. Only costs a buck or two and can help eliminate water in your tank.

Driving Without A Gas Cap

Contaminants (like even rain) can drip into your tank, or just dirt and road dust. Given enough time, your fuel filters will clog up.
But more important, it can mess up your gas mileage since many fuel systems area closed loop system. More dangerous is that there will be fumes around the gas filler, and hopefully, no one will be smoking nearby. Or, in the unfortunate event of an accident, the lack of a gas cap can be a fire hazard. Most back orders aren't long, but think about a used car parts yard.

The gas cap maintains pressure on your fuel system that greatly helps the fuel pump do its job. Without that cap you are overworking your fuel pump and it will not last long. ANY auto parts store will cary a replacement fuel cap for your car.
You should shop around till you find a store with one instock and go get it NOW!

That's not good.

1) It needs to be there for the fuel system to stay pressurized
2) It will make your check engine light come on
3) vapors escape, that creates an extreme fire hazard
around the car there.

Foreign bodies can get into your gas tank and cause major problems, or someone could throw a match in and BOOM no more new car! :D

depending on the make, year, model, etc....it can screw up your sensors readings, screw up fuel system pressure (depending on whether a vented or non vented system), slop gas out when you go around a corner...

it affects your gas mileage and polutes the air.. go to another store or a junk yard till they arrive, but do it asap. try going to the place where you bought it..
