I've searched Wikipedia high and low, and it is too difficult to understand what exactly color charge means. I know that gluons have the ability to make other particles change color, but what does changing color do? How does it change the properties of quarks, and other subatomic particles?

I really want to understand subatomic physics but everytime I try to read a page of it on Wikipedia, it uses terms that I have to look up in Wikipedia, creating a cycle of confusion. So please, I need help from an experienced physics expert.

The topic of subatomic particles is not easy to understand, and you have to be confused at the beginning of your search, so don't worry it's quite normal :)

About your question: color charge is a fundamental property of quarks, just like the electric charge and the spin quantum number, which can be either 1/2 or -1/2. The color charge of a quark can be red, green or blue.

You may be confused by the nomenclature, I was confused too. Feynman said that the idiot physicists used color to describe this newly discovered quantity.

You may ask here why do we need this new quantity? or how did we know about it? Recall that we knew about the electric charges from the behavior of electrically charged particles in electric fields (In fact, this is the definition of electric charges). Just exactly like that, we knew about the color charge from the behavior of quarks in the "strong" field, which is the field inside the nucleus.

"Color Charge" is simply a description for an arithmetic to describe some fundamental physical properties of quarks. You need so many of these and so many of those to yeild a feasable solution.
