The ability to write well is the most valuable "extra" skill in science and engineering, because it is rare. You would probably improve your future prospects more using your extra credits on subjects that train writing skills.

What kind of a job would you like to get? If you are thinking of going for an MBA later on, an Econ minor would help, as would an accounting minor. If you would like to go on the operations side of things (Ops Management or Plant Management) then perhaps a strong Finance background would be helpful.

The most definite way for an econ background to help an engineer is in regards to project planning; civil engineers can take courses in urban/regional economics and transportation economics, while resource economics will be helpful to environmental engineers.

An Econ minor would also be good if you enjoy the abstract reasoning and would like to find another way to use the mathematical theory you take as an engineer.

It depends on what you want to do. I majored in Econ and went on to get a law degree and have practiced law a long time now. Econ. is a good degree to have if you plan to do anything non-science related.
