There are a lot of kid-friendly attractions in Vegas, though the cost will add up quickly. The hours of operation vary for these things, but most of them are open 'til at least 9 or 10 PM.
South Strip:
Hit the Luxor to check out their "Atrium Level". It offers a great arcade, an Imax theater, virtual reality rides, & a King Tut museum. (Luxor is also attached to Mandalay Bay and Excalibur via internal walkways.) For more info:

Stand out front of the Bellagio to check out their free water fountain show. It happens every 15 minutes in the evening, and it's quite impressive. They vary the songs, so even if you hang out for a couple hours and you won't hear any repeats:

Flamingo's pool area offers a wildlife habitat that is open to the public. It features walking paths set in lush gardens amidst ponds with ducks, penguins, turtles, and of course flamingos.

The Mirage offers the Secret Garden zoo, showcasing big kitty cats and dolphins. And in front of the hotel, they also have an erupting volcano on the Strip that's free for all:

Personally I don't recommend the TI pirate show for kids that age. It used to be awesome, but they re-did it a few years ago to try to ditch the Disney image in favor of a more adult theme: the Sirens of TI... featuring half-naked girly pirates.
North Strip...
The Nascar Cafe at the Sahara offers another roller coaster, as well as an arcade and race car simulators:

You might want to spend an evening downtown at Fremont Street. They have a four-block long video screen canopy over the street that offers impressive free entertainment. They also have a couple of stages offering free shows and a ton of cheap souvenir shops for the best prices on t-shirts, mugs, keychains, etc.

Lance Burton's show is for all ages. Circus Circus has the Adventuredome which is like an old fashioned arcade. Stratosphere has some rides that I know I won't be going on, lol, but the views from up top are amazing. At night, Fremont Street has a cool light show and they've really cleaned up that area a lot.
You can go to Sagebrush Adventures and do the dinner/horseback ride. It's a bit pricy at $119, but you get a beautiful ride through the desert and back to the ranch for an outdoor bbq. That's a lot of fun.
There's helicopter and airplane rides to the Grand Canyon and you can drive to Hoover Dam if you'd like.
There's always the pool...be careful though because some hotels like Ceasars have topless pools.
There's Madame Toussaud's wax museam and the Atomic Bomb museam, both of which we're hitting when we go in July.

Most events like this, are well organized and the hosting hotel will create special events and tours for the kids and their families.. otherwise, not much on the strip. People watching, Circus Circus and Game works

VERY limited. Pretty much all they can do is eat and hit the arcades.... Many shows are not appropriate for those under 16 or 18....
