A few things to consider:
First, realm type. There are two distinctions for realms: Roleplaying(RP) vs Normal and PvE vs PvP
Normal realms are exactly as they sound. Straightforward, normal play. RP realms encourage roleplaying, developing a background for your toon, giving them a character, etc. No RP realm requires RP, but it is certainly encouraged.
PvE (Player vs Environment) are servers that are focused on strictly quest based play. You are not allowed to attack other players unless they enable their PvP "flag." You are not able to be attacked by other players unless you "flag." You can flag yourself intentionally by typing /pvp. You can also flag by healing a flagged player, attacking an opposing flagged player, or entering an opposing faction's city.
PvP (Player vs Player) servers are a balance of questing and player versus player combat. On a PvP server you may be attacked any time you leave your own faction's territory (you are "auto-flagged").
PvP servers tend to be very rough on starting players, as it can be difficult once you get beyond 20, as almost all questing takes place in contested (and therefore PvP) territory. You will die. Alot.
Something else to consider for a realm is age. Younger realms tend to have much more unstable economies, Auction House pricing is typically low, so you can get things cheaply, but it's also difficult to make money. Younger realms tend to have lower populations of high level characters, so end-game play availability can be limited. Young realms also may not have done some of the big server events like the opening of the gates of Ahn'Qiraj, which could be a plus for you.
So, if you're interested in roleplaying, consider an RP server. There's nothing to prevent you from RPing on a normal server, but availability may be limited. If you don't mind looking over your shoulder whil you quest, select a PvP server, if you prefer the threats to come at you fron the game only, go PvE. If the possibility of making big money or end game raiding is your goal, go with an older, higher population server. If you're interested in experiencing content and having a greater likelihood of characters around your level, consider a newer, low-population server.

If your new at the game avoid the PVP realms, try a normal or RP instaed.
Steamwheedle Cartel
Thorium Brotherhood
are two good RP realms
if you have friends who play use whatever server their on, u cant send mail or messages across realms.

I play on Trollbane, which is a newer realm. It's nice because there is no stable economy, which means you can get items pretty cheaply on the AH. I play un undead warlock named ChompyChomp!

I was on ravenholdt for a while - that srever is dead
Im on emerald dream now - good server but a lot of immaturity and the economy is crazy
I would just make a few characters and find out what you like.
I liked Ravencrest except it was PVE

hi, i have a level 70 night elf druid on Ravenholdt (RPPVP), and a level 64 undead rogue on Daggerspine (PVP). I have found these realms very good.

Read the big box to the left-hand side when you bring up the log-in screen. Servers are down today for maintenance. They're supposed to be up around 3pm Pacific time.
