I picked some zucchini. How to I store it until we are ready to eat it?

In a freezer tight Ziploc baggie. It will keep for about one week in the fridge. Or, you can chop it up and freeze it.

I would stir fry it in some vegetable oil and a little seasoning - whatever you like and freeze in an airtight container or plastic zippy bag. It should keep for weeks. To defrost, simply add a little water to the container and microwave for a few minutes. Once thawed, stir fry for a few minutes to crisp it back up again.

They will keep several days out of the refrigerator and several more in the refrigerator other than that, i like to slice mine into 1\4 slices and freeze until i am ready to fry them. (peel them first and bag them dry)
