Because if they didn't we woudln't have the yummy little donut holes to munch on and not feel quite as guilty (if it's small it has no calories...)

Yes, indeed. The donut has a hole so that it can cook quickly and evenly. If the hole was not there, then the donut would be too done on the edge and soggy in the middle.

Ever cook something in the microwave, and have it end up burning hot on the outside, and still feel frozen towards the middle?
That's the same with donuts, they won't cook very well if you don't put a hole in them.

apparently it's because of the way they are cooked the center wouldn't cook properly if it were left in (it would be doughy)
