I'm a zone 8 and REALLY wanted to plant some Dahlias.

Any zone can grow Dahlias provided they have warm summers. However, most zones need to dig up the tubers before the first freeze. If you live in an area where winters are warm then you can keep them in the ground year round. I live in zone 7 with a relatively mild winter and I have to dig mine up. I'm not sure how much warmer zone 8 winters are but it should say on the plant which zones are best. It is probably too late to grow dahlias from the tuber, but if you can find some that have already flowered then you can go ahead and put them in the ground.

zone 8 they will do well and most years will over winter without digging and storing for the winter.
