I really not sure, you may try searching.
I want to say, stainless steel will be both expensive and heavy. Many people use Aluminum and there are some that use steel (Not stainless).
The link I found a few days ago, going to make some "Corky" sailboats for some children. There are House Boats and a section below another "Budget Houseboat" These plans I think are all for wood construction, but, it may help you know how to substitute aluminum.
