I dont know where you're going but my favorite is the epcot center for the attractions.

A lot depends on the age of the kids.
I liked the Haunted House, Small Small World, The Train.
Space Mountain was too scary for older folks like me.

Theres so many, make sure to use your fastpass so you get to go on all these...8-)
Magic Kingdom: splash mountain, space mountain, pirates, haunted mansion, thunder mountain
Epcot: test track, mission space, soarin
MGM: tower of terror, aerosmith rockin roller coaster, star wars
Animal Kingdom: safari, everest, dinosaur
Theres many more, but those are some of the most popular with the longest waits.

Check out go2orlando.com. This will provide a link to age friendly sites to help enhance your visit. You can see which rides have height/weight restrictions, which ones are closed and see which parks have extended hours during your visit. ENjoy!
