Well glad I remember looking this up before I went down the Cape w/a friend of mine who is vegetarian. As you will see there aren't many, but check it out then I'll give a few more options;

Be sure to notice that it's organized by the area on the Cape...so while each one only has a couple, it's not just the page it opens to. Be sure to click around! (didn't want you to miss it, as I did the first time lol).
She had very good luck around the Hyannis area, where there are more full service restaurants vs just 'clam/seafood' shacks and restaurants. Most all had good salads and she usually found a few things on the appetizer menu she could add to make a more complete supper. If it would help I could call her and see if she remembers the specific restaurants as we split up some of the time and this was a good few years back.
Now depending on who you are traveling with, here is one option you might enjoy. There is ONE full veggie B & B on the Cape. We overrulled it lol, but check it out;

Even though they are a B & B they offer a variety of meals to their guests (but guess only their guests, so looks like others are looking for what you are!!).
And one more thing. In general when we go out, a lot of times we end up hiitting Chinese food as there are so many vegetarian dishes. I'm sure that would work on the Cape too.
I had one more idea and it came up w/some restaurants too! I did a quick google to see if there were any health food/vegetarian stores on the Cape. Figured if you called them, they would have some GREAT suggestions. This is the site I hit, that had both restaurants and stores. So you might want to call the market and check out the others;

There are some great restaurants...finding vegetarian options can be tough though. I have yet to come across a vegetarian restaurant. Here's a couple places you may have success with though:
Oysters Too in Falmouth is a really nice restaurant. If you phone ahead I would bet they'd make accomodations for vegetarian needs
There are a number of Italian places on the Cape which offer pasta dishes that are vegetarian. Ristorante Barolo in Hyannis is really good.

A lot of restaurants in tourist areas like Cape Cod don't know and don't even care whether what they are serving would really be considered correct for a vegetarian. If you are at one that might have vegetarian options talk to someone who really knows what is in the ingredients and whether for example lard is in the cooking oil. If you are a vegan it is even tougher to get a straight answer.

If you want to see for yourself, you might want to check out the restaurant list of veg or veg-friendly establishments on VegDining.com. There are many listed for Boston, and some of them have been reviewed by people who have actually dined there. I hope it helps.
