Goldfish often change color as they age, and older fish often become pale or white.

Some of the color change is due to the genetics of the fish - this is something you really can't control. Part may be due to lighting (fish kept outdoors show more vibrant colors, but the color fades in about two weeks after bringing them inside (think "sun tan"). Part can also be caused by their diet - goldfish fed with color-enhancing foods, even natural foods like shredded cooked carrots and red pepper can have better color.

Fish can also turn pale if they're under stress. Have you tested the ammonia, nitrite, and nitrate in his tank? He may have been okay as a younger fish, but as he grew, he may have "outgrown" the tank size he's currently in and is producing more ammonia than the tank bacteria are able to process. Other signs of this would be gasping at the surface like he's not getting enough air, and/or bloody streaks in the fins. I'd also make sure that the color isn't due to overproduction of his slime coat, which may be caused by parasites. Another indication of this is that he'd be rubbing against objects in the tank.

If he's not showing these signs, and your water tests are okay, I'd say this was just something with a natural cause.

Gold fish are not actually gold. They turn gold because of light. If left in the dark for a while they will turn white or sometimes see-through. If he has been this way for a year, he's obviously not sick, he just doesn't have enough light.

If he has white spots, he's probably getting sick, and, if that's the case, you should remove him from the tank if there are any other fish. Diseases spread quickly in tanks.

It's his genes. Goldfish are known to change colors. This usually happens within the first year or two of life but it has been known to happen later in life as well. It's nothing to worry about. Genetically, he's supposed to be white. It's just taken awhile to show.
