Garfield (who's real name is Nathan Adams). Was injured during a commercial shoot for Ralston Purina. He was so loved and revered by his fellow actors and the camera that they decided to continue using him in movie roles. Since an auto accident left his jaw paralyzed....his voice is actually done by another cat. This is why you never see Garfield do interviews or red carpet events.

I don't think John really understands him, I think he happens to coincedentally be thinking the same thing Garfield is at all times, and so it seems like he is actually hearing what Garfield is thinking.

he just thinks in thought like the strip, John doesnt understand him, he take physical cues.
