Anyone know how to or know of a website that explains how to make a board-on-board fence. I want to avoid having those 1-2 inch spaces between the fences after the boards shrink in a normal fence

use 'shiplap' boards (they have a half inch rabbit on both sides).

When you place them, they will overlap a half inch on both sides and the overlap will accommodate shrinkage.

paint or stain the boards before installing so the shrinkage does not show a raw wood seam.

Do not fasten at each edge, as shrinkage will then tend to split a board.

If you use 6 inch boards, use 2 fasteners about an inch and a half from each edge.

If you but one edge up against the other and fasten it with screws, it will hold better than anything else. There is no guarantee though. It's better to leave a space, even 1/8 inch between the boards.

Wood moves, it's just a characteristic of wood and there isn't much you can do about it. Humidity and temperature and the moisture content of the wood itself all make it move. Pretty much beyond your control, except for the moisture content of the wood. That one you can check and use properly dried wood.

Best bet would be a shadowbox fence. Boards are placed on the support rails, one on each side of the fence with a 1" overlap from side to side. This also allows some air to come "through" the fence. I think they look nice also.
