mines polaris, great way of knowing your directions on land or at sea.

For rather pragmatic reasons, I would have to say that my favorite is Sol, our sun. It's the source of all our energy, and thus the root source of life itself. Without it, we wouldn't be here!

Your choice of Polaris is a good one -- the North Star is very useful for navigation in the Northern hemisphere.

As far as observing stars in a small/medium aperature telescope goes, I'd have to say my favorite is Albireo, also known as beta Cygnus -- a blue-white/gold-orange double star which is very pretty in a moderately priced telescope. Not far behind that is delta Lyra -- another blue-orange double star.

From there, we start getting into more complicated objects, like the Pleiades and Hyades, Orion, and Casseiopeia (oh, the grandeur of the Andromeda Galaxy!)

Sirius. The brightest star (except, of course, for the Sun), and surrounded by the northern-hemisphere winter constellations make the the most interesting part of the night sky.

Polaris. after being at sea and being forced to learn how to use a sextant, it's an excellent point of reference that anyone can find.

Polaris is indeed a handy star, but my favorite is the sun. Without it we wouldn't be around to have a favorite star : )

My ordinary celeb is the orion belt stars and the southern bypass stars.From Singapore, Orion belt stars can basically be seen from the orion consellation. Orion belt incorporates 3 stars.

Pleiades (ok - not strictly one star!) - whenever I see this it usually means winter is here and that means the best observing for me!

Plus it's always a great one to point out to people - it really is very beautiful!

the pleiades star cluster and sirius...pleiades is 7 stars (its also used in the subaru car company logo lol) and sirius is the brightest star in the sky at night...extremely beautiful
