If the doctor died there'd be no point in working on him... but to answer your question, if a doctor collapsed while doing surgery the surgical team would call a code on him and a new set of doctors and nurses would come in and stabilize him while another doctor and the survivors of the original surgical team continued to work on the original patient.

If the doctor is dead, there'd be no point in performing surgery on him. It's like performing lifesaving surgery on a rock.
UPDATE: If the doctor is still alive, what are the chances of him falling ill after failing to detect a condition that he and his nearby colleagues would be able to treat? I'd say slim to none. Chances are he'd have to go through the normal steps of going to the ER where they identify the problem and apply appropriate treatment.
Aside from that, I don't think it would be fair to choose a best answer based on the amended question.

The patient. The surgeon is dead.
Answer would be same if surgeon had sudden medical condition requiring care. The surgeon would be worked on by a separate medical team.

I hope that that has never happened, but I am sure that IF it were to happen, that the surgery woud stop for moment, for the surgical team to call for help (sfter all, it is a hospital), get some people from Emergency down there, to get that Dr out, and get the patient's surgery finished.

They would call a code and the team that responds would work on the surgeon while the rest of the surgical team would finish the surgery - provided there was another surgeon with the team.
