There is no stated birthday for your Saint. However, I found the related in fo on Wikipedia.:
Elizabeth is revered as a saint in the Catholic, Orthodox and Anglican traditions. She is also commemorated as a matriarch in the Calendar of Saints of the Lutheran Church - Missouri Synod on September 5, the same day her husband Zechariah is commemorated as a prophet.
I couldn't find your Elizabeth (though there were two others) on the Catholic Calendar of Saints. I would therfeore guess you should celebrate her on Sept 5th.
Good luck!!

As stated above, St. Elizabeth's feast day is the 5th of November, according to the Roman Catholic liturgical calendar. The Greek Orthodox Church celebrates September 8th as her feast day, however.
Neither Roman Catholic nor Greek Orthodox tradition knows her actual birthday. The Bible mentions that Elizabeth is beyond the normal age of childbirth, so we know that she would have been at least 40 by the time John was born, but she could have been much older. As Mary's cousin, and Jesus's aunt, she also makes her appearance only in the first chapter of Luke.

If you are a musician, you could choose St. Cecilia, who is the patroness of musicians and music. You could also look up some patronages of most of the saints on the web. There's a site that I found all of that on, but I forget what it actually is off the top of my head. You should Google "Saints Patronage" and you will probably get it.

At the age of 14 Elizabeth was married to Louis of Thuringia (a German principality), whom she deeply loved; she bore three children. Under the spiritual direction of a Franciscan friar, she led a life of prayer, sacrifice and service to the poor and sick. Seeking to become one with the poor, she wore simple clothing. Daily she would take bread to hundreds of the poorest in the land, who came to her gate.
After six years of marriage, her husband died in the Crusades, and she was grief-stricken. Her husband’s family looked upon her as squandering the royal purse, and mistreated her, finally throwing her out of the palace. The return of her husband’s allies from the Crusades resulted in her being reinstated, since her son was legal heir to the throne.
In 1228 Elizabeth joined the Secular Franciscan Order, spending the remaining few years of her life caring for the poor in a hospital which she founded in honor of St. Francis. Elizabeth’s health declined, and she died before her 24th birthday in 1231. Her great popularity resulted in her canonization four years later.
