Hola! The best all inclusives in Cabo are:
Riu Palace, Dreams, Melia, Crowne Plaza, Royal Solaris, El Presidente, but not necessarily in that order. Everyone has its pros and cons. If you could provide more information, such as what you expect, or how much you want to spend, I could narrow it down for you!

Like the others said, each all-inclusive place has it's pros and cons. Some are best for singles and partiers, some best for families, some best for R&R (Romance and Relaxation) - there is something for you no matter what.
One thing I've realized about the all-inclusive set-up, however, is that unless you drink all day, you're almost better off not getting it - and most of these places offer the option to either go all-inclusive or not. If you buy your own meals, you have the opportunity to go other places without feeling like you're double-paying - and there are so many great places to eat and drink in the area.
We stay at Villa del Palmar, which is great for kids and also has a deli/grocery store nearby. You can go all-inclusive or not there. Lots of options, however - just make sure that you understand the primary market that each resort targets and pick one that will deliver what you want.

Probably the best comments I heard, is Riu Palace, right in the main beach in Cabo San Lucas.
But like any other all inclusive, means low quality drinks. Food is OK, but after 3 day having the same food, you want to go out, and that cost you double, since you already pay for that.

Tessoro los Cabos is probably the most inexpensive All inclusive that you will find. Good location. However; there are many to choose from and here is a good site for you to check out.

Cabo is not the sleepy little town it once was. Its a major tourist trap now and not real welcoming like it use to be.
You might save money by getting a hotel off the beach area. Some of them are real inexpensive and quite nice.
The last time I was in town I stayed at a wonderful place called the Bungalows. Its off the beach, very quiet and secluded. A great couple run it and the gourmet breakfasts are amazing. I consider this to be the best place to stay in Cabo. check it out
