You could take a group photo of you and your friends together and either place the pic in a pretty frame or decorate one. That will make a nice gift that she can treasure for years to come.

Post-it note covers (cardstock with printed designs/logos look cute)
Checkbook covers (Use clear vinyl shelving paper to cover cardstock with designs). You can print names, sayings on the paper before covering.
Altered books or CD's for display in classroom.
A CD of special songs, then notes written on the CD.
Color themed baskets (school colors, favorite hobbies of teacher(s), summer themed, etc...)
Visit Hobby Lobby, Michaels or JoAnns and just roam around with a theme in mind. There are fabrics, ribbons, die-cuts, baskets, etc.. giving you lots of options to color-coordinate...

You could make some kind of tiny figurine out of polymer clay like fimo or sculpey. Make it have something to do with the subjects they teach or a joke they shared with you.
