Back in the old days when people sneezed it was thought that evil spirits came out of the person and that is why they would say God bless you. I usually offer them a tissue out my purse to ease the embarrassment.

Absolutely....
And saying 'Bless You' has nothing to do with religion...it has to do with the fact that when you sneeze...you heart stops for a split second...and you say bless you as a way to HOPE someone's heart starts again!
