I'd suggest making a tapas bar, with a Spanish theme.
I went to one in Portland Oregon that was great.
In Spain this winter, seeing all those platters of beautiful tapas lined up made me want to try one of each.
They had like slices of French bread topped with roasted red peppers, little fish, olives, cheeses, tomatoes, and stuffed mushrooms, stuffed olives, little open faced sandwiches with cheese, shrimp, roasted veggies, garlic, olives, and lots of different kinds of picked fish, octopus, squid, seafood salad, etc.
You charge per piece. like sushi bar, and give a few free tapas for people who buy multiple drinks.

MMMMMMM
