I want a really juicy steak, but not too tough. I usually order it Medium Rare, but it's been coming back a little too tough. How should I order it? Should I just ask for it to not be too tough?

I am a chef and cook filet mignon every time i'm at work. For the best flavor I would say (my oppinion) that it should be cooked no more than medium rare. The key is that when it is taken off the grill, it HAS TO rest on the plate or warming counter for a few minites for the juices to redistribute in the meat. Otherwise it will be dry.

Generally, filets are not the best cut, but I'd go for rare to get maximum juiciness.

As the manager of a restaurant/steakhouse located in a local casino, I would have to say rare. But.....due to local laws I have to serve at a minimun medium rare. The cut still retains most of its flavor and is still a rather juicy cut of beef.

Order it Rare. A Steak though, is only as Good as the Steer it came from.

talk to a real meat dude butcher
you can have it anywhere from raw to very well done and find it to be tender of tough, some cooks can't boil water
I cook things like this by sealing both sides, then finishing it off in a steamer
you can have very well done and eat it with a fork, unless the beast died from old age
Human beings should not eat under cooked meat

you should order it rare but then there are places that won't even sell burgers that way
