Is this a good way to earn some extra cash??? Any other suggestions on side jobs would be appreciated as well.

I have been a Notary Public for several years. No, this is certainly not a money making idea. Keep looking and good luck. You need to try something where you actually use a skill or something marketable to earn money. Being a Notary has no skill or talent involved. You have to EARN money, not just get paid for nothing.

I think there's too much "free" competition. For example, most banks and accounting firms offer free notary services for their clients. I would definitely look for something else.
