Every year I get wasps on my patio. The try to build their nests everywhere. Sometimes they even get inside the shell of the jacuzzi, and I have to take it apart and smoke them out! Is there a better way to eliminate, deter, or discourage these wasps? I really don't like to use the insecticides.

Yes. Use a few empty 2 liter pop bottles, and some brightly colored funnels from the dollar store. Red or Yellow works fine. Put about 2 inches of apple juice in each bottle, put the funnel on top and set them out around the patio. Letting the juice stay out there in the sun for a few days or a week makes it work even better because it ferments, and wasps just love apple "wine". (don't use real wine) The wasps smell the apple juice, go down the funnel spout into the bottle, drink til they get drunk, and drown in the juice. they can't get back out, because they are too stupid and drunk to find that small opening at the top again. then just toss the bottles of dead wasps, and use fresh ones with your funnel "flowers".
You will still have to get rid of the nests or hives though, and I heard that hanging a smallish brown paper bag stuffed with newspaper in a prominent location (they think it's another hive) will make them think another colony has staked a claim, since wasps are territorial, they will move on.

Home made wasp trap with an inverted funnel. plenty of plans to build them on the www. Make a few, keep them a little bit away from where you are. you may still have to spray to kill them in the container or run the risk of being bitten when disposing of them.

Lots of wasp traps available, usually using a sweet fluid and one way entrance.Breaks my heart that they're disturbing your jacuzzi time. Try ducking under and holding your breath.

Spraying WD 40 on the nest works for me. When I was young, people would make a small torch and kill them with a brief touch of fire and then knock down the nest.

Traps will reduce the numbers but not eliminate the pests. Screen the patio if it is feasible.

Dawn dishwashing soap and water in a spray bottle does wonders, it smothers them. (make sure the solution is heavy on the dawn).
