this might not be very helpful, but i have done this in class before ages ago. we did an experiment were u get some juice from a fruit then add some liquid, which indicates how much vitamin C is in the juice. I cant remember how it indicates it, but i assume its by a colour change. I also cant remember the indicators name. Sorry. but if you could find out it would be perfect for your project as it actually involves an experiment.

ok i found it on wikipedia: Dichlorphenolindophenol

DCPIP is commonly used as an indicator for Vitamin C. If vitamin C, which is a good reducing agent is present , the blue dye, which turns pink in acid conditions and is reduced to a colourless compound by ascorbic acid.

I think that papayas are thought to be one of, if not the, fruit that provides a substantial amount of folic or ascorbic acid (vit. C)

Dark leafy greens are also a good source of folate as well as vitamin C, as are legumes such as lentils and other veggies: chickpeas, steamed broccoli and steamed asparagus, etc. Steaming vegetables, of course, allows them to retain nutrients that are lost is boiling.

During gestation, it is very important for mothers-to-be to maintain a good intake of vitamin C, even if only by a supplement. The effects upon the body of deprivation of this vitamin are very serious and the foetus can suffer irreversible injury.

I'm not a nutritionist, but I hope this will be of some use to you.
