Like Jee Vee said in Greek and Roman myths the gods were capable of changing their height, at will. They were apparently VERY tall however, normally choosing to take a shorter length when appearing before mortals to be less intimidaiting.

"Aphrodite, the daughter of Zeus stood before him [Ankhises], being like a pure maiden in height and mien, that he should not be frightened when he took heed of her with his eyes. Now when Ankhises saw her, he marked her well and wondered at her mien and height and shining garments. For she was clad in a robe out-shining the brightness of fire, a splendid robe of gold, enriched with all manner of needlework, which shimmered like the moon over her tender breasts, a marvel to see. Also she wore twisted brooches and shining earrings in the form of flowers; and round her soft throat were lovely necklaces ...
[later she revealed her true divine height and mien] and her head reached to the well-hewn roof-tree; from her cheeks shone unearthly beauty such as belongs to rich-crowned Kythereia ... [and] when he [Ankhises] saw the neck and lovely eyes of Aphrodite, he was afraid and turned his eyes aside another way, hiding his comely face with his cloak." - Homeric Hymn 5 to Aphrodite

So I'd say she was about 5'4''- 5'-6'' when she wanted to appear mortal, .........but in actuality 9'-10' ft tall lol. As for Phsyche you can imagine whatever height you want as long as if falls within a realistic height of a women. (5'3-5'10?) I think ancient Greek and Roman men prefered their women a bit more plump in comparison to today's nearly anorexic ideal. So if she were 5'9" she'd probably be 140-150 lbs.

Deities can change their height and weight and size and shape however when manifesting to humans unless disguising themselves as mortals generally tend to appear taller than the mortal. Or so the greek myths and legends claim!

She was a goddess and the most beautiful one at that. So, just imagine all the traits that you would think are beautiful in a female body, and voila. i guess that would be her.
