Rod Carew- married a Jewish woman and raised his kids in that faith, but he didn't convert.
Lou Boudreau - his mother was Jewish but he was raised Christian by his adoptive parents who raised him

Greenberg (who played in the 30s-40s, not 50s) and Koufax (whose birth name was Braun) for sure, and as I understand it Carew is indeed a convert.
Yeager was a good player, but he's not in the Hall. Other Jewish players of note include no-hit pitcher Ken Holtzmann and mysterious Moe Berg. Berg was the player about whom it was first said "good field, no hit" (in a telegram by a scout). He was also a brilliant man, spoke several languages, and was a US government spy. Examples: in a major-leaguers' tour of Japan in the prewar years, Berg was assigned to photograph military installations, and he later posed as a nuclear physicist to enter a postwar conference on the atomic bomb, supposedly with a gun and orders to kill enemy scientists if necessary.

Hank Greenberg...played for the Tigers in the 50's. Sandy Kofax was Jewish also I believe.
And Steve Yeager... he converted to Judaism though.
