The mass of everyone on earth is so small compared to the mass of the earth itself, I imagine the effect would hardly be noticed, though it may be detectable by seismographs.
additionally, the pressure inside of the earth is so great, if a crack were to occur, magma would be more inclined to flow outward, not collapse in an emplosion.
Personally, it think it would be VERY difficult to coordinate the jump. Additionally since people live all around the world, though most live in the northern hemisphere, the forces would tend to balance out.
Though unlikely, if there were a cavern under a thin crust, possibly a small localized collapse of that area of crust could occur.

Not only would getting everyone to jump at the exact same time be completely impossible, but somehow doing so would not cause the world to explode, or implode, or outplode, or blueplode, or whatever. >_>
