I know it sounds fine the way it is but I want to say to my boyfriend Ive been dating for over a year.
I love our nice conversations.

How can i change it around to make it sound better? And I DON'T want to leave it as is. Maybe I could use a different word for nice? I just want to change the wording around but say the same thing. Anyone who writes well, or is a writer please reply, thanks

I agree, nice is inadequate.
How about:
"I enjoy and look forward to our talks."
or
"Talking with you is one of the high points of my day."
or
"I feel great when we connect through our conversations."
or
"Talking with you always makes me feel closer to you. I like that."
or
"It means so much to me that we can talk this way together."
or
"I love how you listen to me."
