What I'm looking for is the most popoular "Table Service" restaurant at any of the four theme parks.

I would say that the two hardest to get anymore is Cinderella's Royal Table and Le Celliers.
However, with the popularity of the dining plan means that a lot of the really good restaurants sell out pretty fast. Chef Mickey's, O'hana's, etc. are all pretty common for selling out.
If you are heading to Disney and have some restaurants you really want to go to, then you should make reservations to make sure you get what you are wanting.

Most popular, as a few folks habe mentioned, include:
Cinderella's Royal Table - inside the castle at the Magic Kingdom; Chef Mickey's - located at the Contemporary, and the Spirit of Aloha Dinner Show at the Polynesian (which I know is not a table service meal, but it is wonderful and is included on the Disney Dining Plan if that is what you have). My favorite restaurant, which requires reservations, but is a diamond in the rough (to quote Disney) is Boma-Flavors of Africa at the Animal Kingdom Lodge. Be sure to add this amazing all you can eat buffet restaurant to your list!

They are so diverse it is hard to know. The hardest to get reservations for with kids is The Princess Breakfast in the Castle, the dinner meal I have had the hardest time getting reservations for ( and I call 6 months to the day of our arrival each trip) is Ohana.
I seen long lines at the Crystal Palace, but reservations were always easy for me to obtain. Fulton's Crab house is very popular.
