Actually JIMMY didn't crack corn at all...
The original lyrics of the song were corrupted through the "grapevine effect."
The original song wasn't "Jimmy cracked corn, and I don't care," it was "gimme cracked corn (a reference to whiskey,) and I WILL SHARE..." The song was sung by poor blacks who were trying to maintain high "spirits" under the harshest of circumstances...Basically saying as long as they had something to drink, everything would be alright...

Because Jimmy found fullfillment in cracking corn. It helped him work out his agressions and control his anger at the "massa" who had gone away, leaving him with feelings of inadequacy, abandonment and anger.
