I do both. I have a ton of cookbooks but I was raised to improvise and not be afraid to experiment in the kitchen so I'll often have several cookbooks out more for suggestion or an outline of what I have in mind.
I'm a purist about some things, like using fresh herbs whenever possible but I use dried when I have to--it's not the end of the world. The idea is to enjoy yourself and my greatest reward is when my husband sticks his face in a bubbling pot, sniffs and looks up and says, "I LOVE YOU,HONEY". LOL

I do some of both, but more like a chef. If I am cooking out of a box, I always play with it a little, add some extra spice and seasoning, throw in more vegetables or meat, replace water with stock or wine or both, depending on what I'm making.

I'm an ok chef...i guess.
I mean i cant prepare filet minonge to perfection (cant spell it either,) but I can make decant meals for kids : )
