(I answered a similar question, a while back; for poignant and informative purposes, here is the answer I afforded. I hope that it provides at least some interesting insight)
...as far as this specific facination, it's pretty much an inherently primal, deep-down underlying, some-of-the-time irresistable compulsion of the human psyche, which has existed since the dawn of mankind; depending upon the situation, there is a tendancy to be consciously torn between being repulsed by such carnage, and at the same time irresistably compelled to watch.
It is for this reason why, in ancient Roman times, both peasents and royalty alike, would scavage seats in the collisium, to see criminals and slaves torn apart by voracious lions.
In France, during the late 1800's & early 1900's, there was 'Theatre du Grand-Guignol', where the ne'er-to-do audiences would subjectively and compellingly view, in plain sight, simulated human eye-gougings, acidic facial meltings, hot fiery pokers stuck...well, wherever, and other sadistic pokes and prods to the human body.
It is for this facination why, during the late '70's and early '80's, there was an over-abundance of successful, money-making 'slasher/splatter' films.
...and let's not forget the never-ending traffic back-ups on the freeway, due to rampant gawking drivers having the necessity to see the mechanical, and possible human carnage, as they pass by in their car.
This has been going on & off & on for years and years and years.....a grim reflection of the dark side of the human psyche; nothing is really ever going to change that, and as film makers continue to push the gag/shock threshold further and further...well, who knows what atrocities lie on the horizon???
Ironically, as far as the 'too disgusting to watch, too compelling to turn away' philosophy, pretty much everyone is guilty of it, to some degree, and are sometimes even hypocritical about it (i.e., someone saying aloud, "Heck! I don't watch that stuff!!!.....but I'm gonna watch it anyways, just to see how far they'll go"; it is for this exact reason why Howard Stern is so popular, with people who not only like him, but also dislike him)
...unfortunately, there will ALWAYS be an audience for this carnage; the trick is, being able to maintain a distinct realization of the, for lack of a better term, 'realistic fakery' on the screen, and still being sensitive to the horrors occuring in everyday life!!!
(...personally, everytime I tune into CNN, 9 times out of 10, I am disturbedly taken aback far more than any horror film I've ever seen, and despite being a devoted, die-hard horror film fan, even I HAVE to admit that such graphic cinematic depiction has gone waaaay beyond the fringe, acceptively; I prefer the monsters, and the surreal dark fantasy stuff, myself, anyways!!!)

Actually I am a "Jigsaw" fan, so I cheered on the main villian of the 'Saw" movies. Yep it is a over the top gory series with little plot. So I rooted for Jigsaw. I'm not so much into the over the top gore, they stuggled to find new ways to "off" people.
