Speed and RPM are directly related in that, in your vehicle the gear ratio of your transmission and your differential dictate how fast your speed is at what RPM. You will notice that your RPM's will go up in lower gears and when your trans changes it goes back down and starts over in a higher gear.
Your mpg is determined by how efficient your car burns gas and how aerodynamic. If your car does not get to 2500 before it hits 70, it won't ever hit 70 at 2500. It is set at the factory to be what it will be. Being that you have a big vehicle your gears are going to be lower so that you can carry the size of your car and tow other stuff like boats and what not. That's what SUV's were built for.
That being said, you can usually get your best gas mileage between 55 and 65 depending on highway conditions. Above that and you waste more gas keeping your RPM' up than anything. Now this is presumed that you travel interstate roads alot. Two lane hwy's are going to use more gas just because they are not built for it.

Fuel consumption has MANY variables. The biggest is the load on the engine. If you are going up hill with all your friends in the car, but keeping around 2000 rpm and under 70 mph you are going to be using more fuel than if you were going that 2500 rpm mark and 70mph alone on a flat road. Yes speed and rpm are a part of engine load, but don't forget about weight. It also plays a major part.

RPM's are the key. However to go faster you need more RPM's so they are generally linked together. Gear Ratios in the transmission and final drive are big factors in improving fuel mileage. The fewer RPM's it takes to go fast the better the fuel mileage. That's why overdrive transmissions are great for highway driving.

2500 rpm is not a special # some cars run best at 2000 some at 3000 some 5000...depends on cam, rear gear ,tires....aero is also a factor...a car shaped like a brick will "push" a lot of air causing lower miliage....the rpm thing...at 70 moph mu big engine truck turns abt 2800rpm my wifes subaru turns 3300...her motor is built and geared for it

RPM and speed are inter related. So you drive and check and find out at what rpm you have more mileage since mileage varies on various parameters such as road, gradient, air velocity, gear rations, Tyre pressure etc.

it has to do with wind forces aka drag the faster you go the more air you have to displace thats drag which means the motor has to work harder to maintain the speed tick your hand out at 60 mph and feel the force now go do 70 and do the same thing
