What shape would you like them then? It's to do with the tube of the intestines that are used for sausage skins.They could be one long tube full of meat but it is more convenient to give it a twist every few inches to make in dividual sausages.You can choose between the big fat thick ones or the dinky little chipolatas.

Tradition allowed for the forcemeat to be packed into intestine of an animal (after it had been killed !). That's the shape an intestine is.
Nowadays, of course other materials are used .
In Scotland sausage meat can appear in the shape of a square patty and is called Lorne sausage (after the town of origin) - a bit like a square burger really.

because the intestinal lining (skin of the sausage) that is traditionally used to make sausages is, well, sausage-shaped! The twists are made at intervals to keep the meat (?) from coming out the end

It's made that shape, so when you fry them they curl up. You can hold the curled sausage with a fork and hold it in front your face to make either a 'smiley' or 'sad' face.
Or put the curled sausage onto a plate. Add 2 fried eggs for 'eyes', a mushroom for a 'nose' and baked beans for 'hair'. Who says you shouldn't play with your food?

Which ones. There are round sausage patties or links whioch has a casing which is stuffed with the sausage mixture just like a hot dog.

LOL Silkie you do make me laugh about your questions- you ask questions I would never think of. I have never questioned why sausages are that shape- ive just accepted it.- maybe it is because the machine was made to make them that shape???
