or you just say this to comfort people from worrying that they are causing you inconvenience?

It depends on what the situation is.
If my hubby says 'hey, darl, I can't take you out to dinner on your birthday because there's a car race on TV', then my 'I don't mind' really means 'damn you, I really wanted to go out, now I have to cook'.
If my daughter says, 'hey mum, I need the computer now for homework', then my 'I don't mind dearie' means, 'crap, now I can't do Yahoo while you do your stupid Myspace pretending that you're doing your homework'.
But, if the family says 'hey, what movie do you want to watch with us mum' then my 'I don't mind' means 'I don't mind, as long as we're all together watching it, I couldn't care less what it is, you choose'.

It is actually an adjustment! it shows adaptability: you have rightly put it, i think, when you said "....to comfort people.....inconvenience." ! A kind of measure of decency, civilization: and, then, gradually, you find that you really don't mind!

Sometimes I really don't mind, and yes, sometimes I do mind, But it depends on the situation when I say it.

Hmm... I always try my best not to mind, and... what do you know? I really don't in the end.

yep ,,, just saying it sometimes because i dont want to bring on the negative thoughts, so i try to stay positive ... even if they are annoying me
