I have 2 tanks, in one the plants grow beyond the water line and reproduce and spread fast, but when I introduce them to my second tank, my gouramis seem to like eat them till I have nothing left. I have tried this with quite a few different plant species. Other tank mates rely on these plants for thier habitat and protection. I put vegetables in the tank daily however this is not working either...

you have some hungry gouramis!

java fern, java moss, anubias, and bolbitis are all easy to grow and nothing eats them. they are all very primitive plants and don't root in your substrate -- you have to tie them to rocks and driftwood and the will eventually root to what you attached it to.

for bunch plants try the hyrgrophelias -- water wisteria and temple plant (red temple is not the same). my gouramis like to eat the leaves a couple days after they drop from the temple plant so i think its a good match.

i float water sprite and my honey gouramis like to pick at the roots but don't eat the plant. they also like to just kind of hang out in it too.

try growing bulbs like aponogetons, dwarf lilies and crinums.

Java Moss and Java Fern are good bets. The gouramis avoid them as they taste bitter. The gouramis can also be fed with algae wafers and veggies so they don't attack your plants. Most floating plants are invulnerable too. You could also add in a whole lot of cheap egeria densa/hydrilla. they grow fast and distract the gourami from stuff like cryptos. You might be able to get away with slightly less hardy plants this way.

Java Moss or Java Ferns, but make sure you don't try to plant these, just tie them to some driftwood or a rock or something like that, they will attatch themselves.
