i'm sorry, but if you want a good steak, you gotta pay. i cannot in good conscience (and honestly, i don't know anywhere that serves a GOOD, cheap steak) recommend a place to eat steak if it doesn't cost at least $30.
the best steak i've had is at Boa's if you like kobe, but that's over $200, and the best bison steak is at Rosemary's in Summerlin. that actually was about $50 but you get a meal w/ it.

Gallaghers at New York, New York was very good but a few months ago I was at the Golden Nugget and we decided to try their steak house. It is called Vic and Anthony's (or something like that) and was the best one I have ever been in and while expensive, it wasn't outrageously expensive for the quality of the meal.
WIthout doubt this is one of top two favorites restaurants in Vegas and probably my favorite steak house anywhere.

Bob Taylor's Ranch House is one of the best hidden secrets of Vegas. It's off of Ann Road and '95. It's been around for years, long before the area was developed. It's definitely worth the drive. It's a casual atmosphere and the prices are very reasonable. The steaks are amazing!

I wasn't that impressed with Gallagher's and I'll never go to Ruth's Chris again. It was good but it wasn't THAT good!
I enjoy Austin's at the Texas Station and sometimes Bob Taylor's Ranch House, but we usually buy prime steaks at the meat market and cook them at home - best steak in town :D
Strangely enough, we've also had good steaks at the Lone Star on Rainbow by Cheyenne, but haven't been impressed by any other locations nor with any Outback steaks.

MelissaJPowers is right, Bob Taylors is the best in Vegas. I have lived here all my life, and every major family event was at Bob Taylors! Good old Bob used to be there all the time, and he treated us like family! Its just a good old fashioned steak house and its run by a cowboy, so you know he knows his cattle!

Del Frisco's should be one of your top considerations. the food and atmosphere are top notch. While there will be several items on the menu that meet your budget requirements, the complete meal will likely run over....depending on drinks, dessert, coffee, etc.

I liked Gallaghers at NYNY and AJs at the Hard Rock. (AJs does NOT believe in small food. You're going to pay about $50 a person, but the ONLY way you'll leave hungry is if you have your jaw wired shut.)
