Cheddar, the sharper the better!
A close second would be smoked gouda on a nice cracker.

Oh gosh, i have been having an affair with cheese!

I like to melt cheddar on stuff (veggies, meat, anything)

I like blue cheese in dressing for my salads and dips.

I like to snack on panela cheese and when I want something salty, i like cotija.

Munster cheese or Mozarella when I want a mild cheese!

I have to pick??? There's too many cheeses in this house to pick just one. Cheddar, feta, provolone....I guess those are the top three.
