Does anyone know if different types of peppers planted too close will cross breed?

Absolutely not. Pepper flowers are self-pollinated, although occasionally cross-pollinate. However, the result of this crossing will appear only if seed is saved from this year's crop and planted next year. It will not result in off-flavor or differences in fruit characteristics of this year's crop.

They will cross pollinate....so any seed you save from those peppers would not be the same as the parent plant. Your existing plants won't produce a different pepper though. If you planted a jalapeno and a green bell next to each other, you would still get jalapenos and green bells on the respective plants.

As noted, you will get the parent breed of peppers you planted. They may have more tang though. Planting hot peppers too close to tomatoes, for example, can render "warm" tomatoes.
