An old saying is, "Everything is easy when you know how."
One young friend of mine is very good in math and he is majoring in physics because to him, it is very easy. He told me recently that he hadnt studied in two years and has a 3.8. But obviously there are only a few college students who can major in that subject and get good grades.
In general, the easiest subject for most people would be Education and the hardest subject would be anything to do with math! Languages or music are easy if you havethe gift, but impossible otherwise.
A general rule would be, the subjects that you like are easy and the subjects you dont like are hard... just like in life, when you get a job. If you have a job you like it's a pleasure going to work each day. It isnt even 'work' any more!

A lot of making a major hard is the talent required for that major. Dance, I suppose, on paper is a pretty easy major - but probably not for the white suburban guy. Music performance is probably easy - for the good musician. I, however, would probably have looked pretty silly in dance and music.
Generally the harder academic majors will be the hard sciences - engineering, chemistry, physics, biology. Laboratories consume lots of time and require a fairly steady hand to do the work.
Conversely, the social sciences will often the the easier academic majors at a university - political science, economics, philosophy, sociology, etc. I had classmates that showed up for their political science classes for the first day to get the syllabus, the midterm, the days papers were due, and the final. One semester we showed up for the midterm and there were fifty people standing around without seats - since the Prof had had half an empty room most of the time, he figured all those people had dropped the class, and the university hadn't gotten around to updating his class list yet.
Academically, the fine arts are probably the easiest majors. Of course, the academics are offset by the fact that they often must perform their music or dance or art. That, in fact, might make them the most difficult majors.
And I found that the students who were good at the hard sciences were usually not very good at the social sciences - and vice versa. Very few students liked both of the disciplines and had to choose one or the other. And the arts students often didn't care about science or the social sciences. To each their own choice.

It depends on ones strengths and weaknesses. I am excellent in the social sciences, but I had to take algebra 5 times (serious gpa killer).
Here's the thing...
Classes don't always make the major "hard." Sometimes it is the bureaucratic red tape that one must go through to graduate in a major, especially one with a professional certification like education. A student-friendly administration plays an important role in whether or not a major is "hard."
Also, there are hard classes in every major. Each major has a "weeder" class that really tests a students commitment to their field of study and makes a lot of students think twice about what they are getting themselves into.

It depends on the person - obviously. From my perspective: education is the easiest and any science class that includes a lab is the hardest. I say it is hard only because you have to put in so much extra time. It really isnt fair.

I feel natural sciences like Biology, Chemistry and Physics are the harder majors because of the amount of classwork plus labs. The easiest in my opinion are Business management, Art and Music.

It really depends on the school. I always thought early childhood education was easy because almost all of those majors graduated with honors

It depends on the person's strengths! People are better at different things. I aced my political science courses but I found math really hard.
