Because for pacies the wicket keeper needs to stand back otherwise they risk conceding a lot of byes or leg byes. More importantly they run the risk of getting their faces re-arranged.
But there are instances of stumpings by wicket keepers off pacies. Kumar Sangakkara stumping - was it Brian Lara - in the WC 2007 off Chaminda Vaas is one example.
Caught & bowled - spinners have more time to adjust, and also because after the delivery is complete the spinner basically stands still rather than having a big follow through like the pacies.

Because with spinners, the wicketkeeper is standing very close to the stumps so very easy to reach to the stumps. When in pace bowling keeper is way back so even they try to hit the stumps from way back there are very good chances of missing the stumps and possibly overthrow runs. Another thing, spinner can spin the ball and make the ball move away from a batsman while batsman try to hit the ball by going forward a couple of steps and that's when the most stumping happen.

For spinners the wicket keepers are near to the stumps and stumpings will happen frequently 4 spinners and rarely 4 fast bowlers. As far as caught and bowled goes spinners are slower than fastbowlers and any mistimed shots and the balls which is played against the spin will go infront of the wicket rather than behind the wicket bcoz of lack of pace....

1. Stupmings................
Spinners dont bowl in a high spped. ( normally <100kmph)
So, the wicket keeper can stand very closer to the wicket.
When there is a chance for a stumping, the wicket keeper
must break the wicket instantly.
When he is closer to the stumps, he can break it quickly.
Thats the answer.

2. Caugh & Bowl..............
Spinners' follow through is slower than of the pace bowlers.
So the spinners can adjust for the catch easily because they
have much time before the ball come to him.
Thats why spinners have more C&B.

Absolutely. You will hardly ever see a batsman go a way forward to meet the ball when a fast bowler is bowling but when a spinner is bowling he is tempting the batsman to go forward for a big hit. When the batsman misses or doesn't connet the ball properly he is an easy victim for stumping ot caught and bowled. We see caught behind the wicket more often with the space bowling.

Since spin bowlers normally bowls slow balls the tendency of batsmen to step out of the crease is mostly against spinners. Similarly the caught and bowled chances are also mostly with the bowling of spinners as some times tbe batsmen try to play defencively against the slow balls of the spinners which ends in chance for catch to the bowler.

Stumpings are more common for spinners because the wicket keeper stands up to the wicket, so can easily remove the bails. Caught & bowled is easier for spinners because their follow through is slow so they are better balanced for taking catches than fast bowlers. its pretty simple...when a spinner bowls the wicket keeper wud be upto the stumps so the chances r more and spinners r given the ball to decisive the batsman wid their flight, spin and turn...similarly spinners get more C&B chances cus they ve a short run up n they don rush as fast bowlers do...so they can adjust well to hold the catch...

stumpings can haapn only on a spinner's bwlin bcoz if for d fast bowler keeper stands bhnd n evn if heits d stumps ,d batsman is ruled run out..... a stumping can happn only if d keeper is close 2 d stumps wen d bowler is bowlin...
for C&B, fast bowler takes a long run up due 2 whch he has a long follow thru n also due to his pace of d ball he is not able 2 grasp it whch is exactly vice versa for a spinner.....
