What you would see would be a very big telescope! The primary mirror of the hubble is about 2.4m across, so if it was a million times bigger it would be 2400km across, which is 70% of the size of the moon, and "maxihubble" therefore would be clearly visible from the earth (even allowing for it being in a much more distant orbit).
Personally I think that if it was bigger you would just see "more of the same".
To tabulator: You are incorrect - Hubble is indeed an optical telescope.

Its a radio telescope, not a visual one so, you wouldn't "see" a giant eye.
Also, it would be better to have a thousand or so Hubbles instead of one a million times larger. If you had the buddget, go for the economy pack.

They are making some telescopes now with much greater resolving power and computer controlled optics, so you might get your wish. It doesn't need to be bigger to be more usable.

Likely you would see yourself scratching the back of your head (billions of years from now!). Your image would travel at the speed of light regardless of the lens size.
